I learn from other bloggers that the main reason of causing muffins hard is usually we overmix the ingredients. Perhaps you can first separately mix the wet and dry ingredients, so that they can be folded easily and mixed together and to shorten the folding time^^
Dry items refer to flour and powder, while wet one includes oil, yogurt, egg and water. For the nuts, dried fruit or choco chips, I usually add in when all nearly mix well. Hope it helps and wish u succeed!!

刪除係呀,真係功多藝熟,不過都會有老貓燒鬚時,早前整藍莓 muffin 都已經失敗了,質地唔夠鬆呢!
